Macroom Buffalo Farm
TY and 6th year Ag Science students paid a visit to Macroom Buffalo farm, owned by Mr. Johnny Lynch. What an experience it was, as students and staff were given an educational talk on the history of the Buffalo species, reasons why Buffalos arrived to Macroom and the (bi)products of Buffalo milk. Students got up close to the Buffalo herd of cows and even closer with the baby Buffalo calves. We were also brought on a tour of the milking parlour and cheese making factory, and on the final part of the tour, we got to sample some halloumi, mozzarella cheese, buffalo burgers and even a dessert made from buffalo cheese! This links in with the Senior Cycle Ag Science course regarding breeds, milking process, gestation, artisan food, along with the crops they grow, hedges and ponds on the farm to improve biodiversity.
